Potluck Quinoa Salad with the best Apple Cider Vinegar Dressing

This Quinoa salad is one of my go too lunches its quick to make and very satisfying. Trust me you are going to want to make a big batch of this and the cherry on top is that this salad transports really well! So it’s perfect for packed lunches, picnics or for a BBQ with friends.

It’s also Vegan, Gluten free and packed full of protein. The apple cider vinegar and the quinoa are the only essential items everything else can be swapped for anything you have in the fridge that needs using up

 

 

Prep time 5 minutes

Cooking time 10 minutes + time for the quinoa to cool

serves 2

 

Ingredients
1 cup quinoa (uncooked)
1 spring onion
1 cup spinach chopped
1 carrot grated
1/2 green pepper diced
5- 10 radishes thinly sliced
1 chilli finely sliced
1 garlic clove finely grated
handful of fresh chopped parsley
handful of chopped nuts / seeds

 

For the dressing
1/4 cup extra virgin olive oil
1/4 cup apple cider vinegar
2 tsp maple syrup or honey

 

To cook the Quinoa place 2 cups of water in a pan add 1 cup of quinoa, pop a lid on a simmer for 10-15 mins until all the water has been absorbed. Once cooked set aside to cool

In the mean time make the dressing combine the olive oil, apple cider vinegar and maple syrup in a small bowl season well with salt and pepper.

Add all of your chopped vegetables and herbs into a large bowl, add in the chopped nuts/ seeds the cooled quinoa and mix. Then pour the dressing over and mix again. Check the flavour add more herbs and salt and pepper as desired
